I haven’t checked the price tag on the retired fire truck C-series for sale in my town. Maybe I should.
It has the advantage (?) of having had the bed works more or less removed, so it would arguably be a great conversion for toy hauling.

Many of them are. I have a strange fetish for old work trucks, especially fire trucks. I look at them a lot. I'll probably end up getting an old wrecker if anything though, then I can at least justify ownership with some usefulness.

They are loud and too large to take to the cruise-in for onion rings. The only people who collect them are firefighters so demand is probably pretty low.

Mostly, yes. Limited market for them. But, they are overbuilt and usually meticulously maintained.

It wouldn’t surprise me. Used ambulances are also surprisingly cheap. They’re also vehicles that are usually maintained to a pretty high degree, although idle time is probably as important as mileage in evaluating these. I think the pricing probably has something to do with the bodies and equipment being so specific for their indented application that they don’t have a lot of other commercial applications they’re especially well suited for.
The other thing is that a lot of these chassis have super, super short gearing in them (moving heavily loaded, shorter distances, with constant slowing and accelerating from clearing intersections while running code ). That kind of gearing is going to be miserably expensive to run trying to re-purpose the truck as a water hauler over-the-road without re-gearing the truck. All that red body work is also a bunch of useless weight and given away payload to run around with.
I’ve got this idea to someday day pick up a large, used ambulance built on a medium duty truck chassis as a tow vehicle and track-side camping rig. The theory being RV’s and travel trailers are built like crap. An ambulance is actually a rugged, strong box that is already sealed, insulated, climate controlled, plumbed and wired. They even have a nice, DOT approved storage cabinet for a high pressure cylinder to power all the air tools without messing around with a compressor at the track.
The idea would be to make a camping solution out of the back, and tow an enclosed trailer with the racecar and equipment behind it. Part of the calculation would have to be planning on throwing away the rear axle and swapping one in with tall enough gears for extended interstate speeds a fewer than on the rev limited RPMs.

I’ve had a similar camper idea for an ambulance but with a twist. I’ve thought about finding a 4x4 ambulance and then building it into an overland rig. The short gearing would actually be preferred in that case so going to bigger tires would be easier.

I know a guy who has a couple, but he owns an ice cream/coffee shop and built in a garage to store them. I think he uses the trucks for stuff like parades and local events.

I know you don’t need a CDL for anything if it’s just for personal use (‘Merica)
I’ve never heard about there being a different registration for commercial vehicles, but I imagine it’s similar to the CDL thing. Once it’s no longer being used for commercial purposes those requirements don’t apply.

Yes, even relatively new ones hold so little value that large departments either donate them to smaller departments or are happy to get anything for them at surplus equipment auctions.
I know someone that buys a truck or two per year and makes decent extra money breaking the trucks down for scrap. A few pieces he sells on eBay, but mainly the brass and aluminum are worth the time to strip one for him.
